Chefs and cookbooks encourage us to cook with heart-healthy extra virgin olive oil, and I'll bet every reader of The Perfect Pantry has extra virgin olive oil in their own perfect pantry. What percentage of the world's production of olive oil is extra virgin olive oil?

Another one that I have no idea, but I am guessing it's low. I can't imagine it's as low as 3% though, so I am going to guess 10%.

I want to say 25% but can't be right so I'll say 10%. Though with all the bad oils, the various vegetable oils... corn, peanut, colza, it really could be 3%.

I think that 40 percent of the olive oil produced is extra virgin olive oil. Yes, I do have extra virgin olive oil in my pantry. Actually, I have 2 bottles on hand.

I'm guessing 10%. I always have some in my pantry.
