Five favorite slow cooker chicken recipes (The Perfect Pantry).

Three years ago, I bought my first slow cooker: a red four-quart oval, no-frills model I found at a local discount store for less than $20. I tested a recipe for chicken stew, and I've been cooking chicken in the slow cooker ever since. I always have boneless, skinless chicken breasts in my freezer, and often have chicken thighs, too. Your well-stocked pantry provides all you need to take that slow cooker chicken on an around-the-world adventure.

Yum I love slow cooking foods! Extra tasty in winter.

They all look so good! You're a master of the slow cooker.

My mom visited and combined olive brine and artichoke marinade (left in the jars) for my slow cooker Greek chicken tacos, but I've got a whim to try chicken, cream cheese, and cranberry salsa for a slow cooker meal to serve at work next week.

Lydia, I am not typically a slow cooker fan, especially when it comes to chicken and chicken that is boneless, skinless!

I have one recipe that a friend gave me called "Ginger Chicken" which is sort of similar to your "Soy Braised Chicken". You mix 1 cup low sodium soy sauce, 1 cup water, 1/2 cup brown sugar with 1 T. smashed fresh ginger. I take a bunch (about 10) of bone in, skin on, chicken thighs and place them in the slow cooker and pour the soy mixture over over top. I cook it 4 to 6 hours and then place the chicken on a broiler pan skin side up and broil to crisp it up. Sometimes I will reduce the remaining liquid down on the stove top while crisping up the chicken and when I am lazy I just ladle the juices straight from the slow cooker over the chicken after it has crisped up.

Lisa, I love the sound of your slow cooker chicken. I seldom cook skin-on chicken in the slow cooker, because I don't like to separate out the fat in the sauce at the end (too lazy), but I'll bet that crispy skin at the end is delicious.

Jeff, yes, I'm partial to the coffee-chipotle roll-ups, made with our local Rhode Island specialty, coffee syrup.

Funny but I've never used my slow cooker when cooking chicken breasts. After seeing your recipes, I'll definitely have to change my ways. :)
