Blueberry, apple and basil smoothie recipe {vegetarian}

Blueberry, apple and basil smoothie.

The first time my husband Ted whizzed up this blueberry, apple and basil smoothie, it was Memorial Day weekend, when we'd just planted our basil in the herb garden, and a few leaves needed to be trimmed. On a whim, Ted tossed the leaves into his new blender. Who knew that blueberries and basil could be so happy together? You can use frozen blueberries or fresh, whatever is easiest to find. The fresh herb adds a little savory edge to what would otherwise be a sweet smoothie, just enough but not too much, a bit of brightness that tickles your tongue in a pleasant way. Now, if only we could do something to brighten up the color.

Blueberry, apple and basil smoothie (The Perfect Pantry).

Blueberry, apple and basil smoothie

From the pantry, you'll need: plain low-fat yogurt, agave nectar, fresh basil.

Serves 2.

Ingredients

1/2 apple (use a tart variety like Gala), cored but not peeled, roughly chopped
1/2 cup frozen blueberries
1/2 cup unsweetened apple juice
1/2 cup plain low-fat yogurt
1/2 tsp agave nectar, or more to taste
3 large basil leaves
5 ice cubes

Directions

Place all ingredients except the ice into a blender, and process until almost smooth. Add the ice, and continue processing until completely smooth.

Serve immediately.

Actually, the color of that smoothie looks pretty darn good compared to what mine look like. I love basil with strawberries but haven't tried it with blueberries. Great idea!

Kelly, Ted is turning into a fearless smoothie experimenter. To be honest, I never really loved smoothies, but now I'm hooked, and I taste every one of the variations he tries.

I'm impressed with Ted's mad smoothie skillZ. My kids would definitely go for this one! Yesterday I dumped a whole clump of grapes in--hey, the VitaMix demo lady at Costco did it! But somehow the grape stems never got chopped up. Other than that, the taste was fine and the wilting chard got used up, so I still consider it a win. Just a win with a bunch of gunk at the bottom.
I will add basil to my next blueberry smoothie.

Yummy! Great recipe. I got real fruit on powder form, I mix it with milk and ice cream to go healthy. they have berries, mango, soursop, apple, pineapple, etc. A lot of fruits & veggies.
